Cocoa-nut Cookies

These were inspired by Paleo Parent’s Coconut Macaroons, which are also fantastic cookies! 🙂  Mine are quite similar but use cocoa instead of the chocolate chips, plus other minor variations.

1 cup warmed Coconut Cream Concentrate (or make your own – see my Apple Crisp Recipe)
3/4 cup maple syrup
1/2 tsp. salt
1/4 cup unsweetened cocoa powder
1/4 tsp. aluminum free baking powder
1/2 cup coconut

Preheat oven to 350 degrees.  Place coconut cream concentrate and maple syrup in food processor and process until combined.  Add remaining ingredients and process until it all binds together.  Scoop into desired sized cookies.  Baking time will vary depending on size, but I baked mine for about 20 minutes.  (You will want them to start getting toasty – but not burnt.)  Let cool before you try to take them out of the pan – these are good hot, but even better cold! 🙂

I made these cookies small – 30 of them and baked them 13-15 minutes at 350.  🙂  (Pre-baked on the left – finished product on the right.)
