Roasted Chicken Legs

This is surely the easiest of all main dishes.  It hardly even qualifies as a recipe, but sometimes we need a reminder when we are in a hurry.  Its very high up on my favorite list, probably because chicken was a treat for us when I was a kid.  And crispy chicken skin is worth getting excited over.  Yum! 🙂

4 chicken legs/thighs (preferably pastured chicken)
*Feel free to sprinkle some thyme or rosemary

Preheat oven to 350 degrees.  Place the legs skin side up in a pan and cover with salt and pepper on both sides.  Bake for one hour.  Baste by spooning the juice and fat over the skin of the chicken.  Put back in the oven for another 45 minutes or until crispy and golden.  🙂
