This is more “breakfast-ish” than my other breakfast ideas. It can be adjusted according to the season and is quite refreshing. The fat in the coconut milk gives lots of energy and counters the sweetness of the fruit. (See my post on Coconut Oil for more information.)
Winter Months- Oranges, Grapefruit, Apples, Pears, Bananas, Pomegranites, Frozen Berries…
Summer Months- Peaches, Plums, Grapes, Berries, Cherries, Melon, Apricots…
Creamy Coconut Milk (I like Thai Kitchen)
1. Chop fruit and place in a bowl.
2. Open can of coconut milk. Spoon on some of the creamy milk. Don’t be afraid of the fat here! Its the energy building kind, not that fat storing kind.
3. Sprinkle cinnamon if desired. Enjoy! 🙂
