Ginger Carrot Salad

I love carrots.  They satisfy my sweet cravings, even when I am trying to avoid sweet things.  They are beautiful, and delicious.  And they make me feel good!  What a blessing! 🙂  Any of these ingredients can be altered to your taste, so have fun with it. 🙂

4 cups peeled carrots cut into chunks (If you don’t have a food processor and you are going to grate them by hand, don’t cut them into chunks, just approximate.)
Juice of 1 lemon
1 tsp. grated fresh ginger
1/4 cup olive oil
1/2 tsp. sea salt (or to taste)
Freshly ground pepper
1/2 cup raisins

1. Shred carrots in a food processor, or by hand.  Put in a mixing bowl.

2. In another bowl, mix the remaining ingredients.  (You want the ginger Super fine, if possible use a microplane grater…)

3. Mix with the carrots.  Adjust any seasonings if desired.

4. Enjoy!
