My husband and I have been playing around with different fat/protein/carbohydrate ratios. Everyone needs to find their best mix as we all are all different, and it’s a wonderful discovery to realize how your body works. Well, we think we like carbs! Grains make us feel lousy, but good old potatoes are fun, yummy, and we feel great when we eat them! This recipe is quite similar to all my oven roasted veggies, but its good to remember your options. And honestly, these are SO good, they deserve their own recipe. 🙂
3 Russet Potatoes (or more!)
1/3 (ish) cup Coconut Oil
1. Heat oven to 400 degrees. Melt the coconut oil in the bottom of your roasting pan or cookie sheet.
2. Cut potatoes into sticks. Coat in the coconut oil. Sprinkle with salt. (They will crisp up best if it is only one layer!)
3. Roast in the oven – mine took exactly 40 minutes. It somewhat depends how big you make them.
