This is not my idea, but I found it so brilliant since I’m really enjoying my homemade Kombucha these days. I am fasting from sweeteners for Lent, but am allowing some Kombucha. It helps cleanse my palate after a meal, and satisfies any sweet cravings (while giving me the benefits of probiotics).
I made This Recipe, from The Nourishing Gourmet, without the honey, and it was fantastic! I used 1 Tbs. of gelatin, but I think I would try a little more next time (probably 1 1/2 Tbs.) It was gelled, but very soft. Kimi recommends adding fruit or fruit puree, if you wish! 🙂
