I could eat this for dessert! No joke! The lemon and zest add a lot to it – it is just so yummy! 🙂
12 medium carrots
1 ripe little yellow honey mango (or half of a larger mango)
Juice and Zest of one lemon
2 Tbs. Extra Virgin Olive Oil (I used two glugs) 🙂
1/2 tsp. sea salt
A dash of fresh ground pepper
a small sprig of parsley, chopped
1. Peel and grate the carrots. Peel and grate the mango. (I used my food processor with the grater disc.)
2. Zest the lemon (I used a microplane grater) then juice it. Remove the seeds.
3. Mix all the ingredients in a bowl. Adjust the seasoning if necessary.
4. Enjoy! 🙂
